Blackberry Ricotta Tarts

"You don't really know someone until they cook for you" - ME 

The other day I was making a birthday lunch for a friend and remembered I had some puff pastry in my freezer! These simple puff pastry tarts are my go to when it comes for simple sweets. You can add anything to them and they always taste amazing.

Lemon Honey Ricotta 

I took some lemon juice, lemon rind, and honey and added it to some ricotta before spreading it on my puff pastry dough.

Spread on puff pastry 

I cut my puff pastry so that I could criss cross fold over the edges to make a thicker boarder that would hold all the goodies I wanted to put on it. I then did an egg wash over the exposed puff pastry before popping them in the oven. I line my pan with parchment paper so they are easier to transport once done. 

Golden Brown

It took somewhere close to 20 minutes at 350 degrees before these babies looked golden brown and ready to eat! I saved them until after dinner but they taste best while still warm!
